Italian Sub Sandwich

One of my all time favourite vegan sandwiches- roasted veg and tofu, spinach and artichoke whip. Perfect to use up leftovers or for an indulgent lunchtime sarnie! Recipe Slice butternut squash, red pepper and courgette and toast at 180 degrees Celsius for 40 minutes.
